Our Daily Bread

Good bread is hard to find in Pune. It's never quite the right density...or has a good crust...or it might be lacking flavor...or just be stale. I think we have finally perfected a recipe that tastes great, is somewhat healthy, not too dense, not too squishy, and is puffy in the middle.

We have found it to be great with everything! The recipe is below as I have adapted it from Ann-Sofie's bread making recipes.

Ingredients:
500 g. of white flour (maida)
1/2 c. seven-grain flour (atta)
325 ml. water
1 tsp. yeast
1 tsp. sugar
1 tsp. sea salt
1 tbsp. olive oil
1/4 c. sunflower seeds
2 tbsp. flax (alsi) seeds
2 tbsp. sesame seeds, black

Directions:
Add half of the flour, then water, and the remaining half of the flour to the bread machine bowl. Make two holes in the top of the flour on opposite sides of the machine. In one hole, add the yeast and sugar. In the other hole, add the sea salt. Gently, cover the exposed holes with flour. Then, add the oil on top of the flour. Program the machine to bake on the "Basic" cycle. When the machine "beeps," add the seeds.

You can try to add more wheat flour for a healthier loaf, we oftentimes add half white, half wheat, however it creates an extremely dense bread and this was a nice bread that was not too dense or squishy, and pairs nicely with most meals and sandwiches.
